Lazy Sunday


I have so much to do today but I just cant seem to get out of this house. Maybe its the time change or just that its been raining non stop since I woke up. I have to get to the mall and take some stuff back and also have to have them take the ink tag that is still attached to a pair of pants that I bought last week at Penny's. I cant take it off or ink will burst out everywhere and ruin everything. I cant believe the alarm didn't go off when I left the store. Tomorrow Cory and I will get up and go to the mall so I can get all my stuff done.

I was talking to my mom and she said my dad was really exhausted from yesterdays outing. He has been in bed all day. It is going to take a while before he's back to where he was.

Brady was taken to the hospital the morning. He had a really high fever. Found out it was an ear infection. Poor little guy. I hope he gets better real soon.
I made mexican stuffed shells tonight. I love them. They make quite a lot, almost another whole pan full. I usually always give the 2nd pan away so I had Cory take it over to John and Laura's tonight. I am going to post the recipe but I change it every time I make it and I don't go by exact measurements anymore.
A little over 2lbs of Hamburger
2 jars of picante sauce. Hot, medium or mild depending on how spicy you want it.
2 large cans of French's fried onions
1 lg bag of yellow shredded cheese
1 can of chopped green chili's. ( I use 2 cans as I like it spicy)
1 large can tomato sauce
1 box jumbo shells
Boil the shells and drain and put them aside.
Brown meat and drain. Mix in a separate brown 1 jar picante sauce and half can of tomato sauce and 1 cup (that is the only measurement I remotely go by) water. Add a cup or 2 of the tomato mixture to the drained meat. Add one can of the french fried onions and the can of chili's and around half the bag of the yellow cheese. Mix all together. You want it so it sticks together. I sometimes have to add more of the picante sauce mixture to it or more fried onions or cheese to it to get it where I want it. You will probably have to make more of the tomato mixture by now with the 2nd jar of the picante sauce and remaining tomato sauce . I use a cake pan and I put enough of the tomato mixture to cover the bottom of the pan. Then spoon the meat mixture into the shells one at a time. I stuff them pretty full. Then I pour the rest of the tomato mixture over all the shells in the pan. Cover the pan in tinfoil and cook at 350 for 45 mins. When 45 mins are up then take the foil off the pan and sprinkle a little yellow cheese over the shells and some of the french fried onions and cook for another 15 mins. Enjoy. I love your mom's recipe for Mexican shells! We've enjoyed them many times...thanks for reminding me how good they are!

I bought a pair of pants around x-mas and they forgot to take the ink tag thingy off too. What a bother!

Hope Brady is feeling better...ear infections are scary! Poor little guy!
